Chef-made burgers in Leicester: what it really means
A chef-made burger is cooked to order from fresh ingredients by someone who watches every patty, with sauces and seasoning developed in the kitchen rather than bought in. At DesiSmash, that cook is Chef Hass, who has spent 25 years working with spice.
"Chef-made" can be just a label. Here is what it should actually mean on a burger menu, and what it means at DesiSmash in Leicester.
1. A small menu that is cooked well
A chef-led kitchen focuses on a short list done properly, instead of a huge menu done adequately. We cook burgers, fries, dips and cans, and that is all. That is why the same griddle, the same bun and the same sauces make eleven burgers, rather than a long list of unrelated dishes.
2. Cooked to order, not held
Every patty is smashed when your order is due, then built straight onto a butter-toasted brioche bun. There is no tray of finished burgers waiting under a lamp. That is the main reason pre-ordering a time slot makes sense.

3. Sauces made in the kitchen
Our five house sauces are made on Thursday: OG house sauce, fiery naga mayo, mint-coriander chutney mayo, roasted garlic aioli and a smoky BBQ glaze. Making them ourselves means we can adjust acidity, heat and creaminess to suit each burger on the menu. Our mayo-based sauces contain egg, so tell us about any allergies when you order.
4. Spice knowledge you can taste
Chef Hass has spent 25 years cooking with spice. In a Desi patty that shows up as a blend of green chilli, coriander, ginger-garlic and ground spices such as cumin and garam masala, mixed into the meat before it hits the griddle. The fat carries those flavours out to the crisp edges. Read more in Desi spiced smash burger explained.
5. Choice that makes sense
We offer burgers in three tiers, so you can see what you are choosing:
- Classics: The OG Smash, The Oklahoma Onion, Naga Firecracker, Garlic Chilli Crisp and Smoked BBQ Pitmaster.
- Gourmet: Tikka Butter Melt, Caramelized Stampede, Tamarind & Bombay Street, Truffle & Wild Mushroom and the vegetarian Paneer Tikka Melt.
- Heavyweight: The Triple Threat, with three 2.5 oz patties.
Every burger can be made Original or Desi, beef or chicken.
6. Honest information
You should be able to see what is in your food. All our burgers contain gluten, milk and egg, and sesame and mustard are in buns and sauces. We cook on shared equipment, so we cannot guarantee any item is free from an allergen. Tell us about any allergy when you order, and ask us for the full allergen information.
7. A cook you can talk to
Orders are confirmed by Chef Hass on WhatsApp, so you can ask a question, mention a note or check a detail before your slot.
Is chef-made always better?
Not always. High-volume kitchens are built for speed and consistency, and that has real value. A chef-led kitchen works to a smaller schedule, and we cook Friday to Sunday only. We compare the two fairly in chef-made smash burger vs fast food burger.
